The main objective of this research project is to develop a methodology for the extraction and concentration of hydroxytyrosol (HT) and other polyphenols present in olive oil industry residues, in order to obtain a high-quality antioxidant concentrate. The project seeks to address the technological challenge of improving the efficiency and sustainability of polyphenol extraction, focusing on avoiding the use of solvents and maximizing HT content.
The project seeks to generate scientific and technological knowledge and tools that contribute to the development of innovative solutions for obtaining natural antioxidants from olive oil industry residues, abundant in the region, such as alperujo and alpechin, enhancing their applicability in various industries and promoting sustainability and efficiency in the olive oil sector.
