Maria Jara, a 24-year-old girl from the village of Eskoriatza, is a partner in the company Smallops, which is developing a technology for the recovery of olive oil, alperujo, and alpechin waste, which could revolutionize biogas worldwide. Jara has two other partners, Iñigo Monreal and Ruben Escudero, and a chemical engineer, Lola Hernández.
